Falafel Pita Pockets


A vegetarian Middle Eastern dish for you to put together at home. Falafel pita, garlic tahini, harissa hummus, fattoush and dill pickle

What’s Included Method

Pita pockets
Confit garlic tahini
Harissa hummus
Lebanese cucumber
Dill pickles

Preheat oven to 180C
Remove falafels from packaging and place on lined baking tray

Heat falafels for 8-10 mins of until piping hot

Dice the cucumber and tomato, thinly slice the shallot and roughly chop the parsley. Mix all together and season with a pinch of salt and olive oil

Sprinkle a small amount of cold water onto pita pockets and heat in oven for 2 minutes

Make a small opening in the top of the pita pockets by slicing across, open the pita up and fill

Recommended to apply a good amount of harissa hummus to both sides of the pita, add 2 falafels, a spoonful of fattoush and a drizzle of tahini sauce

Repeat process with 2 more falafel, fattoush and more tahini. Slice pickle lengthways and fill pita
