Chicken kiev |
Pre heat oven to 180c and remove the chicken from the bag. Heat a frying pan on medium heat and place a generous amount of oil into the frying pan, it should be about 1/2cm deep with oil – fry for 2 mins each side until the crumb is a golden brown. Transfer the chicken onto a baking tray and into the oven and cook for a further 10-12 minutes. Lightly oil and salt the broccoli, broccolini and radicchio. Place the vegetables in a griddle pan, cut side down, and cook until blackened. Alternatively, you can place the vegetables on the baking tray and roast in the oven. To serve; place the chicken and broccoli salad on the plate. Spoon over some of the herb dressing on the broccoli and sprinkle over the pumpkin seeds and parmesan. |
