Black Garlic Kiev & Broccoli Salad


Crispy black garlic chicken kiev served with charred broccoli salad, smoked pepitas and parmesan

Chicken kiev
Smoked pumpkin seeds Herb dressing

Pre heat oven to 180c and remove the chicken from the bag.

Heat a frying pan on medium heat and place a generous amount of oil into the frying pan, it should be about 1/2cm deep with oil – fry for 2 mins each side until the crumb is a golden brown.

Transfer the chicken onto a baking tray and into the oven and cook for a further 10-12 minutes.

Lightly oil and salt the broccoli, broccolini and radicchio. Place the vegetables in a griddle pan, cut side down, and cook until blackened. Alternatively, you can place the vegetables on the baking tray and roast in the oven.

To serve; place the chicken and broccoli salad on the plate. Spoon over some of the herb dressing on the broccoli and sprinkle over the pumpkin seeds and parmesan.
